Healthy, Easy Pecan Pie

As we talked about yesterday, the healthiest part of pecan pie is the pecans.  The good news though is that you don’t have to give up pecan pie altogether.  A few months ago I ran across a pecan pie recipe in Natalia Rose’s book The Raw Food Detox Diet.  This recipe is extremely easy and, I must say, tastes surprisingly similar to pecan pie.  When you look at the recipe you’ll see what I mean.  I’ll admit I doubted at first, but am happy to say the recipe proved me wrong!  This recipe has become a new favorite when I want a healthy treat.  Give the recipe a try and let me know what you think.

Makes 1 serving

4 dates

4 pecan halves

Open and pit the date.  Place a pecan inside and enjoy!
